Is a general purpose ale yeast with neutral flavour profiles. Its low attenuation gives beers a very good length on the palate. This is the yeast with a medium sedimentation: forms no clumps but a powdery haze when re-suspended in the beer. Ideal for specialty ales and trappist type beers.
BEERS TO BREW: English IPA’s, English Bitters, English Browns and milds, English Pale, Brown Porter, Barleywines, Cream Ale, Old Ale, English Barleywine*, Scotch and Scottish Ales.
* Ferment on the warmer side of the temperature scale.
INGREDIENTS: Yeast (Saccharomyces cerevisiae), emulsifier E491.
FERMENTATION: Ideally at 18-26°C
PITCHING: 11.5 g per 23L.
ATTENUATION: 70% (residual sugars 25 g/l).
FLOCCULATION: NA.
SEDIMENTATION: Medium.
TOTAL ESTERS: 27 ppm at 20°C in EBC tubes.
TOTAL SUPERIOR ALCOHOLS: 209 ppm at 20°C.
