Atlas malt was designed as a lighter style continental type pale malt, suitable for use in specialty lagers and lighter style ales. This versatile, fully modified malt is made exclusively from low protein, Latrobe variety barley, Sourced from Binya and surrounding farmland in the Western Riverina of NSW. An extended, cooler germination is employed to promote even modification.
A gentle kilning profile showcases the typical green, grassy, fresh hay like characteristics synonymous with this style of malt. The new world Planet variety features high diastatic power and fermentability, making it suitable for dry, crisp finishing lagers.
